Ingredients:

  • 4 Tablespoons of gelatin Try this one by organika from amazon!
  • 1 1/2 Cups of cold water divided
  • 1 1/2 Cups of organic cane sugar, you can also use regular white sugar for this
  • 1/2 Cup of honey
  • 1/2 Teaspoon of salt
  • You will also need some icing sugar for dusting to prevent them from sticking!

Step by step instructions on how to make homemade marshmallows

The first step to making these marshmallows is to bloom your gelatin. To the bowl of your stand mixer add half of the cold water (3/4 cup) and then sprinkle your gelatin in. You are going to want to leave this for at least 10 minutes. I left mine for about 20.

While your gelatin is blooming, to a medium sauce pan add the rest of the ingredients, except for the icing sugar ( 3/4 cup water, 1 1/2 cups of cane sugar or granulated sugar, 1/2 cup of honey and 1/2 a tsp of salt.

Over medium – high heat, heat up the mixture allowing the sugars to dissolve, stirring often. Once the sugars are dissolved, bring the mixture up to a boil. Once it reaches a gentle boil cover it and allow it to boil until it reaches about 245 degrees Fahrenheit. You can use a candy thermometer or just a meat thermometer checking it often, careful not to burn yourself on the steam.

Once it comes to temperature, remove it from the heat. Set the stand mixer to low with the bloomed gelatin inside, and slowly pour in the sugar mixture.

Once it is fully incorporated turn your stand mixer up to high and let it mix for 10-12 minutes. It will become white and fluffy and form stiff peaks.

While it’s mixing prepare your 9×13 baking dish with parchment paper and a generous coating of icing sugar.

When the marshmallow mixture is ready, working quickly transfer it to your prepared dish, smoothing it out as best you can with a spatula. Transfer it to a fridge and let it set for 4-6 hours or overnight.

After they have completely set, cut them into your desired size and enjoy!!

I like to sprinkle them with icing sugar after I’ve cut them to help keep them from sticking, but after they’ve been cut, they peel away from each other pretty easily!

What is blooming gelatin and why it is important?

Blooming gelatin is essentially, rehydrating and activating it. It is what ensures your recipe will have a firm structured texture and not be runny. The powdered gelatin absorbs the water, and swells, turning into a jelly like consistency. Rehydrating it before hand also helps to ensure it gets evenly distributed throughout your recipe and doesn’t clump up.

These homemade marshmallows are the perfect addition to hot chocolate!! Hot chocolate is so easy to make homemade, All you need is 3 ingredients, milk, cocoa and brown sugar. Then to your mug add 1Tbsp of brown sugar and 1 Tbsp of cocoa, if your using an extra large mug, just increase these measurements slightly. Once your milk is hot add about a third of it to your mug and using a milk frother mix it in well so theirs no clumps! If you don’t have a milk frother check out this one from amazon!
