I absolutely love this Oatmeal chocolate chip cookie recipe! These cookies are soft and chewy with crispy outer edges. They are so good! I make this recipe in my stand mixer and it only takes about ten minutes to get the dough ready to bake, no chilling in the fridge just mix them up and pop them in the oven! This recipe makes about 20 large cookies.

Ingredients for this recipe

  • 220 grams Butter melted
  • 200 grams Brown Sugar
  • 150 grams Granulated sugar I used organic cane sugar from Costco!
  • 2 Eggs
  • 1 Tbsp Vanilla
  • 125 grams Organic rolled oats – My favourite is Bobs Red Mill
  • 275 grams Flour – I usually use Better basics milling or Anitas
  • 1 tsp Baking powder – I always choose aluminum free like this one from amazon
  • 1 tsp Baking soda
  • 1 tsp Salt Redmonds real salt is my go to
  • 1 Cup Chocolate chips – My favourite option is camino

Step by step instructions:

This oatmeal chocolate chip cookie recipe is super simple, start off by melting your butter and adding it into your stand mixer with the sugars and whisk until combined.

Once the sugar and butter is combined add in your eggs and vanilla, Whisk this on medium high speed in your stand mixer until the mixture becomes fluffy and light in texture

In a smaller bowl whisk together all of your dry ingredients and add them to your stand mixer, at this point I like to swap out my whisk attachment for the paddle attachment to combine the dry ingredients into the wet.

Once the flour is almost fully incorporated add in your chocolate chips and give it one more stir!

To portion your cookies I like to use a 1/4 cup measuring cup. Using the 1/4 cup scoop out some cookie dough so the 1/4 cup is just slightly underfilled, see the picture below! Then use a small spoon to scoop it out of the measuring cup onto a parchment lined baking sheet.

I use extra large baking sheets and measure out 8 cookies per tray However if you are using a standard size baking sheet, just do 6 cookies per tray, these cookies will spread quite a bit.

Bake them in the oven at 350 degrees Fahrenheit for about14 minutes, they will still be quite soft when you take them out so let them set on the cookie sheets for a few minutes before transferring them to a cooling rack to finish cooling!

  • 1 Small sauce pan

Ingredients
  

  • 220 grams Butter melted

  • 125 grams Organic rolled oats
  • 275 grams Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 Cup Chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit
  • In the bowl of your stand mixer add the sugars and the melted butter, Using the whisk attachment, whisk until combined
  • To the sugar mixture add the eggs and the vanilla and whisk until for a few minutes on medium to high speed until the mixture becomes fluffy and light in color
  • To the bowl add the flour, oats, baking powder, baking soda, and salt. Switch your stand mixer to the paddle attachment and Mix until just combined. Then add the chocolate chips and mix until incorporated
  • To portion out these cookies I use a 1/4 cup and use just shy of 1/4 cup of cookie dough per cookie, using a small spoon to scoop the batter out of the measuring cup. This will make quite large cookies, you can adjust the size and cook time to your liking.
  • Line your baking sheets with parchment paper, I use extra large baking sheets and bake 8 on each at a time, if you're using regular sized cookie sheets, only bake 6 cookies on them at a time. These make large cookies so they will need room to spread.
  • Bake in the oven for 12-14 minutes They will still be quite soft when you take them out, but should look crispy on the edges. Let them firm up on the cookie sheet for a few minutes before transferring them to a cooling rack.
