EASY DOUBLE CHOCOLATE COOKIES WITH WHITE CHOCOLATE CHUNKS
I love a good chocolate chip cookie, but sometimes I like to switch it up! These double chocolate cookies are so good and a nice alternative to the traditional chocolate chip cookie. This recipe is super easy and it results in a soft delicious cookie!

Ingredients for these cookies
1 cup (225 grams) Butter melted

1 cup (200 grams) Brown sugar
1/2 cup (100 grams) Granulated sugar
2 Eggs
2 cups (240 grams) Flour
3/4 cup (75 grams) Cocoa powder
1 1/2 Tbsp Vanilla
1 tsp Baking soda
1 tsp Baking powder
1 1/2 tsp Salt
6 oz White chocolate chopped into chunks
I like to make these cookies in a stand mixer but you could easily mix them by hand with a whisk or using an electric mixer!
How to make these cookies
To make these cookies you want to start off by melting your butter. Then I like to put it in the fridge for just a couple minutes so that it isn’t super hot.
While the butter is cooling in the fridge measure out the rest of your ingredients. In the bowl of your stand mixer add the sugars and in a separate bowl whisk together your flour, cocoa powder baking powder baking soda and salt!
Chop up your white chocolate, you can use white chocolate chips for this but I prefer to use chocolate because it melts into the cookies! I used white bakers chocolate but you could easily use a chocolate bare like this from amazon.
In your stand mixer whisk together the melted and cooled butter and the sugars! It should look and smell like caramel!
Once its well mixed, add in the eggs and the vanilla and whisk again until incorporated.
Remove the bowl from the mixer and stir in the flour mixture, and once that is almost incorporated add in your white chocolate chunks and finish stirring!

When your scooping out your cookie dough onto your cookie sheet I like to use 1/4 measuring cup and I scoop the cookie dough with that, make it so its almost full and use a spoon to scoop it out of the measuring cup onto a parchment lined cookie sheet. This makes the perfect sized cookie! This way you get about 18 cookies!
Scoop out 6 cookies per tray and bake them at 350 degrees Fahrenheit for 10-12 minutes depending on how soft you like your cookie. I like to take them out at the ten minute mark and then let them sit on the cookie sheet for a couple minutes out of the oven before lifting them off with a spatula so they don’t fall apart. They will set more as they cool down!


Easy Double Chocolate Cookies With White Chocolate Chunks

Ingredients
- 1 cup butter melted (225g)
- 1 cup brown sugar (200g)
- 1/2 cup granulated sugar (100g)
- 2 eggs
- 2 cups flour (240g)
- 3/4 cup cocoa powder (75g)
- 1.5 tbsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1.5 tsp salt
- 6 oz white chocolate chopped into chunks
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Start off by melting the butter, then put it into the refrigerator to cool for a few minutes while you prepare the rest of the ingredients
- In a medium bowl whisk together the flour, cocoa powder, baking powder, baking soda, and salt and set aside
- Next in the bowl of your stand mixer, add in the sugars and melted butter, and whisk on high until it comes together. It will look like caramel
- To the butter and sugar mixture add in the eggs and vanilla and whisk again until incorporated
- Remove the bowl from the stand mixer and stir in the flour mixture, once that is almost fully incorporated add the chocolate chunks and stir until everything is combined
- To portion the cookies use a 1/4 measuring cup almost full, and on a parchment lined baking sheet bake 6 cookies at a time for 10-12 minutes.
- The cookies should be a but soft when you take them out, I like to let them rest on the baking sheet for a few minutes after removing them from the oven to firm up slightly before transferring to a wire rack to finish cooling.
