Preheat oven to 350 degrees Fahrenheit
Start off by melting the butter, then put it into the refrigerator to cool for a few minutes while you prepare the rest of the ingredients
In a medium bowl whisk together the flour, cocoa powder, baking powder, baking soda, and salt and set aside
Next in the bowl of your stand mixer, add in the sugars and melted butter, and whisk on high until it comes together. It will look like caramel
To the butter and sugar mixture add in the eggs and vanilla and whisk again until incorporated
Remove the bowl from the stand mixer and stir in the flour mixture, once that is almost fully incorporated add the chocolate chunks and stir until everything is combined
To portion the cookies use a 1/4 measuring cup almost full, and on a parchment lined baking sheet bake 6 cookies at a time for 10-12 minutes.
The cookies should be a but soft when you take them out, I like to let them rest on the baking sheet for a few minutes after removing them from the oven to firm up slightly before transferring to a wire rack to finish cooling.
