NO BAKE PEANUT BUTTER PROTEIN BARS

Looking for healthy snacks? These no bake peanut butter protein bars are perfect! With over 7 grams of protein per bar these healthy snacks are perfect for helping you reach your protein goals while also getting in a little sweet treat!

Chocolate and peanut butter is my favorite combo, and these granola bars taste just like a peanut butter cup. The addition of seat salt sprinkled on top is the perfect finishing touch to balance out the sweet peanut butter chocolate combo. But what I love most about these granola bars is that they give me an extra 7+ grams of protein per bar.

Making your own granola bars is an affordable way to make a healthier swap from pre packaged granola bars! As most store bought granola bars contain less than ideal ingredients and can be expensive when trying to get a healthier alternative especially when looking for a bar that has a higher protein content.

For the bars:

  • 1 cup or 250 grams of natural peanut butter with no added sugar
  • 1/3 cup or 100 grams of maple syrup
  • 1 scoop of protein powder this New Zeeland Whey is my favorite because it has clean ingredients and it tastes delicious. Plus it comes in so many flavors, I used vanilla for this recipe
  • 1 cup or 120 grams of oats my favorite is Bobs Red Mill gluten free rolled oats

For the chocolate topping:

  • 100 grams of dark chocolate I used one bar of Lindt 70% dark chocolate
  • 2 Tbsp or 30 grams of coconut oil
  • flaky salt or sea salt Maldon Sea Salt flakes are THE BEST

These bars are super easy to make, start off by measuring out your peanut butter, then whisk in the maple syrup and protein powder.

Next you’re going to want to stir in the oats

Line a 9×9 pan with parchment and then scoop the peanut butter oat mixture into the pan and spread it out. I find the best way to spread the mixture out is to use a piece of plastic wrap, lay it across the pan and then use your hands to spread and press the mixture into the pan.

After that melt your chocolate and coconut oil in a pan

Pour the chocolate mixture overtop of the peanut butter mixture. Then sprinkle sea salt over top.

Transfer the pan to the freezer and allow to harden for a few hours. Once frozen remove from the freezer and slice into bars, I sliced mine into 12 bars.

Transfer the bars to a container and store in the freezer! Once frozen enjoy these healthy snacks

Ingredients
  

  • 1 cup or 250 g peanut butter
  • 1/3 cup or 100 g maple syrup
  • 1 scoop protein powder
  • 1 cup or 120 g oats
  • 100 grams dark chocolate
  • 2 Tbsp or 30 g coconut oil

Instructions
 

  • Whisk together peanut butter, maple syrup, and protein powder
  • Add in oats and stir together to form a thick batter
  • Using plastic wrap and your hands press the batter into the pan
  • Melt the chocolate and coconut oil together in a pan and pour it over top of the peanut butter base
  • Sprinkle with sea salt and transfer to the freezer to harden
  • Once frozen cut into 12 bars
