Quick Pickled Onions
These quick pickled onions are so good and SO easy. I prep these at the beginning of the week and use them throughout the week on sandwiches, salads, bowls, burgers and more. They’re super versatile and add so much flavor to whatever you decide to throw them on.

What you need:
- One large red onion
- 1/2 cup White vinegar
- 1/2 cup Apple cider vinegar
- 1 tsp Granulated sugar
- 1/2 tsp salt
How to make quick pickled onions:
Start off by thinly slicing your red onion and adding it to a medium sized sauce pan, then add in the rest of the ingredients. Bring the mixture to a boil over medium high heat and give it a stir to make sure the salt and sugar are incorporated.

Once the mixture has come to a boil, turn the heat down to low and allow the mixture to simmer for a few minutes. Then remove it from the heat and allow it to cool. The onions will continue to soften and absorb more of the pickling liquid while in the fridge, After it has cooled transfer the contents to a jar and store them in the fridge.
