THE BEST FUDGY SOURDOUGH DISCARD BROWNIES
These brownies do not last in my house, they are so delicious! They are super chocolatey, fudgy and the crispy top is so good! Brownies are my favourite treat and I have to limit the amount I make these because I have no self control when it comes to these brownies. I hope you give them a try and love them as much as I do!

What do you need for this recipe?
This brownie recipe is made in a stand mixer, however a hand mixer would work as well! You’ll need a medium saucepan for melting the butter and chocolate as well as a 9×9 pan for baking. And parchment for lining your pan. You also need a kitchen scale for measuring out this recipe if you don’t have one check out this one on amazon for under $15.00!
Ingredients for this sourdough discard recipe
- 250 grams chocolate
- 115 grams butter
- 70 grams cocoa
- 1 Tbsp vanilla
- 100 grams discard
- 3 eggs
- 200 grams white sugar
- 110 grams brown sugar
- 125 grams flour
- 5 grams salt

Steps for baking these Sourdough Discard Brownies
To make these brownies, start off by adding your chocolate and butter to a medium sauce pan, over medium heat melt these two ingredients together

While the butter and chocolate are melting, in the bowl of your stand mixer add the eggs, and sugars. Using the whisk attachment set your stand mixer to high and whisk until the egg sugar mixture becomes light in color and forms soft peaks! This will take a couple minutes, don’t rush this step! It is what gives the brownies that delicious crispy top.

Once the chocolate and butter are melted together and smooth, to this mixture whisk in the cocoa, vanilla, and sourdough discard.
After that you want to transfer the chocolate mixture into the stand mixer with the egg sugar mixture, and whisk together on medium high.
Remove the bowl from the stand mixture and stir in the flour and salt. Once fully combined pour the batter into a 9×9 pan lined with parchment and bake them at 350 degrees Fahrenheit for about 35-40 minutes. Check them by inserting a toothpick into the center. You want it to come out ALMOST clean! A little chocolate sticking to the toothpick is okay and will give them a more fudgy center!

Cool the brownies completely before cutting.

Instructions
- Preheat oven to 350F
- In a medium Sauce pan over medium heat melt together butter and chocolate
- Meanwhile add the eggs and sugar to a stand mixer, and using the Whisk attachment set your stand mixer to high and whisk until the sugar and eggs becomes fluffy, light in color and forms soft peaks.
- To the melted butter mixture whisk in the cocoa, vanilla, and sourdough discard.
- Add the chocolate mixture to the stand mixer with the eggs and sugar, and whisk on medium high till combined
- Remove the bowl from the stand mixer and stir in the flour and salt
- Transfer the batter to a 9×9 pan lined with parchment
- Bake at 350F for 35-40 minutes, Until a toothpick inserted in the center comes out almost clean
- Let brownies cool before slicing.
